Quinoa suffed Capsicums

I found this recipe on the eat Yourself Skinny blog - She has some amazing recipes I can't wait to try out.
The original recipe is here but I changed it a little bit because that's what I do...

1 brown onion - Diced
2 teaspoons - minced garlic
3 celery stalks -Diced
1 red chilli - Deseeded because ET is a sook
 1/2 cup - Lite/low fact cheese
3 x capsicums - Halved & with all the yucky stuff taken out.
1 & 1/2 teaspoons -  cumin
1 can -  diced tomatoes
Salt & pepper to taste
3/4 cup -  Quinoa (I used white but next time I'll use red)
1 & 1/2 cups - water

Cook the quinoa as per the packet instructions ie: rinse/soak quinoa, add to a saucepan with water & bring to the boil. Cover and cook on low until the water has been absorbed. Takes 10-15 minutes depending on the amount of quinoa/water. Pretty simple.

In a frying pan cook the onion, celery & chilli until browned. Add the garlic & cumin and cook for another minute - I followed this part of the original method but next time I'll add the garlic when the onion is slightly browned, as I found it wasn't cooked enough for me.

Add the tomatoes and cook on a medium heat until the liquid has been absorbed.

Mix the quinoa, cheese & vegetables together. Add salt & pepper to taste - I just put them in the same pan to save on washing up.

Spoon into the clean capsicum & put it in the oven.
The original recipe said 40 minutes but I didn't have that long so I just pumped it up to 200 degrees and waited for the skin to pucker on the capsicums. Probably took 25 mins

We had these with grilled chicken and ET loved it. It was a healthy & yummy meal. Next time I'd probably change the flavours and add in some basil instead of the cumin.

Oh I put coriander on top.
